Cinnamon & Rosemary Old Fashioned

'Tis the season, you guys! For what, you ask? Oh. Well. 'Tis the season for family and friend time, giving gifts, receiving gifts, cookies, scarves, having too many commitments, feeling happy, feeling stressed AF, wearing sparkly clothes, drinking festive drinks, de-icing your car. Is that enough? Cool.

I'd like to circle back to the "festive drinks" mention, because methinks you're about to see a few more of those this season from us. A little bird (named Alexi) told me that Alexi has several fancy drinks up her sleeve that she plans to share, and I tried my hand at it this weekend. This old fashioned starts with making a rosemary and cinnamon infused simple syrup. It uses honey instead of sugar which is great, and smells heavenly while it simmers.

Ingredients (yields 1 cocktail)

For the simple syrup:

  • 1/2 cup water
  • 1/2 cup honey
  • 5 sprigs fresh rosemary
  • 3 cinnamon sticks

For the old fashioned:

  • 2 oz bourbon
  • 3 dashes aromatic bitters
  • 4 teaspoons of above simple syrup
  • 1 big ass ice cube

Instructions

  1. Make the simple syrup! Over medium heat, combine the honey, water, rosemary sprigs and cinnamon sticks. Simmer until the honey is completely dissolved. Let it sit until cooled. Remove the rosemary and cinnamon and transfer to an airtight container. You can keep it in the fridge for up to 2 weeks.
  2. When you're ready for the fun to begin, add 4 teaspoons of the infused syrup and 3 dashes of bitters to a smaller glass than I used so it doesn't look half consumed from the beginning. Swirl them around, then add the bourbon and ice, and stir. Add a rosemary sprig for classiness. Cheers!
