Tonight was an “I’m too tired to put a whole lot of effort into making something decent for dinner but I still want something somewhat decent” kind of night. Boxed mac & cheese (preferably Amy’s white cheddar shells) is usually a fall-back when it’s slim pickin’s and some sort of vegetable is added- usually broccoli. But tonight, I took it one step further- one fancier step further- and added smoked trout, which can be found canned at Trader Joe’s… and probably most grocery stores.
I used about half of a 4 oz can of smoked trout for one box of mac & cheese, prepared. I also sauted about a cup of kale with 2 cloves of garlic and a little olive oil and mixed into the mac & cheese and trout right before serving. That’s really all the effort I was willing to put in and it was so much better than just a plain box of mac & cheese. Smoked salmon or tuna would also be delicious along with your favorite veggie.
