Brown Sugar Cookie Ice Cream Sandwiches

My friend Ashley and I have known each other since 4th grade, when I thought she was really cool and she thought I was strange. It’s a good thing she got over that whole thinking I was weird thing, right? RIGHT?

Anyway, we spent a whole lot of time at each other’s houses over the years, and one thing I remember specifically, aside from thinking it was a perfectly awesome idea to pack our faces with oatmeal, honey and milk before going to sleep, was that her mom made ice cream sandwiches out of chocolate chip cookies and kept them in the freezer.

This is a great way to re-purpose leftover cookies! Just smush a few spoonfuls of your favorite ice cream between your favorite cookies, double wrap them and freeze for a sunny day!

I used Joy’s brown sugar cookie recipe which was RIDICULOUS. In a good way. A really good way. Mine turned out a little… chubbier… than hers, but they were so chewy and caramely that I didn’t even mind.

    • Hi Michelle! I really wish I could tell you what I did to achieve the fluffier cookies. This was ironically one of the rare occasions when I followed a recipe almost perfectly. I would play with the butter consistency. Sorry I couldn’t be of more help! If anything, this will be a tasty experiment for you.
