Dreamy Creamy Choco-Avocado Pudding and a Little Sap

I cannot tell a lie. I had chocolate pudding for breakfast today. But if it’s any consolation to you, as I know you’re utterly disgusted by me, it wasn’t your average pudding. In fact, I’d dare to call it an appropriate choice! Why, you ask? Because it was mostly avocado! I stand, er, sit, before you today to share both this recipe and some sappy thoughts.

First, the pudding! To recreate this, you will need:

  • 2 ripe avocados
  • 1/3 cup cocoa powder
  • 1/3 cup agave nectar or honey (We used 1/3 cup agave and added a few tablespoons of honey to taste)
  • 1/2 cup milk (Or nondairy substitute- we used almond milk)
  • 1 1/2 teaspoon vanilla extract
  • We are currently pondering trying this again, but using vanilla yogurt instead of milk.

Directions:

Sike. All you need to do is place all of the ingredients in a blender or food processor and pulse until creamy. If you’re like us, you may gasp upon opening the lid of the blender and discovering that it does, in fact, look like pudding!

On a more serious, less chocolatey note, we were excited when Lindsey contacted us, asking us if we’d be interested in participating in a Link Up on her awesome blog. The theme was “Dreams.” Our first thought (yeah, we do actually have synchronous thoughts) was “Of course, obviously we’ll do it!” but then we got to thinking, what do we have to say on this topic?  We can’t physically bake dreams… or can we…?  Instead we bake things that sometimes turn out and sometimes don’t, we throw ingredients around, we make rodent-shaped desserts (that’s a teaser for something you’ll soon see!), but really, this blog is more than that.  First, it ensures that Alexi has to hang out with me at least once every couple weeks. Second, and probably more important, it’s a place for us to be creative and share things we’re excited about with anyone and everyone (mostly our moms) who decide to click on our obnoxious Facebook posts. It was a dream that came to us during a time where we spent a lot of days together (shout out to Pasta & Co!) handing out samples of cheese, spraining ankles while taking the trash out (Alexi), and slipping in mop water (almost always Hilary) – we can’t wait to see where it takes us, even if it’s just to one of our kitchens, with coconut all over the floor and butter under our fingernails.

  1. I love avocados and chocolate! This sounds like a winner to me. I am also interested in finding out about “rodent shaped desserts.” I knew Lindsey would have some really FUN friends! So glad to meet you both!

  2. So (hang with me for a really short story)… there is a homemade gelato shop just up the street from our apartment. It’s owned by this really flash trendy Italian man who I’m pretty sure either loves us because we’re his best customers or thinks we are going to blame him for making us fat one day soon… which we fully intend on doing. Anyhow, his gelato comes in the most amazing flavors… white chocolate velvet, espresso cocoa sorbet, kiwi muffin, vanilla blueberry creme brulee. But after reading your post, I’m convince he won’t have really arrived into mine and my husband’s “foodies-hall-of-fame” until he has made choco-avocado gelato 🙂

    Plan on making it this weekend… have to buy a blender first.

  3. Yum- kiwi muffin! That sounds delicious and like a good pet name for a New Zealander lover. 🙂 You should suggest the flavor to him- maybe then you’ll be in an even better place with him when it comes time to sue.
